Easter Bunny Blondies Recipe

Easter Bunny Blondies Recipe
Looking for something festive to serve for Easter? These Easter Bunny Blondies are not only yummy, but cute enough to feature on a dessert buffet or serve as part of the dessert to an Easter dinner. Spring M&Ms are in the batter, and the top is decorated with those ubiquitous Peeps that come in several colors. A few mini Cadbury or Robin eggs complete the décor.

Although the dough is perfect for a 9” x 13” baking dish, I’ve found that a 1/4 sheet pan makes better squares. Incidentally, if you have Peeps leftover from last year that are stale, they work perfectly in these bars.

32 Bars

1 cup butte
1 1/2 cups packed brown sugar
2 eggs
1 teaspoon vanilla

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt

1 1/2 cups Easter M&M Candies

Peeps Marshmallow Bunnies
Mini Cadbury Eggs, or Mini Robin Eggs

  1. Preheat oven to 350°. Spray a 1/4 sheet pan (9" x 13") with non-stick spray, line with parchment, and spray the parchment. If the 1/4 sheet pan isn't available, use a 9" x 13' glass baking dish.
  2. Cream the butter and brown sugar until mixed well. Add the eggs and vanilla and beat until all is combined and the mixture is very light.
  3. Measure the flour, baking soda, and salt into a fine strainer set over the butter mixture and shake through.
  4. Mix well and stir in the M&M candies.
  5. Spread evenly in the prepared pan. .
  6. Bake 15 minutes; remove from the oven, arrange Peeps decoratively over the surface, and add a few chocolate eggs in between.
  7. Return to the oven for 7-8 minutes or until the middle is set. Remove from the oven and cool thoroughly before cutting into 32 squares.
